Retail versions are always buggy when it comes to bethesda and you can always work around the issues with community patches that iron out the bugs and glitches (for the most vanilla experience that is free of errors), then for your other playthroughts you can slap on mods that drastically change the gameplay and graphics, add new campaigns and so on.
If you're a modern type of gamer the DOS games are much less accessible to you of course. Start with the games that released on consoles + add bug patches and go wild with it.
I personally played Morrowind for the first time in 2012 (almost a decade after release) and it became my favorite game of all time. Meanwhile I couldn't enjoy skyrim in comparison.
