Same reason I'd never burn 40+ minutes stirring onions in a pan like an idiot rather than popping it into the oven while covered lightly with foil and occasionally stirring.
Then you just dump it into your stock (simmer onion & garlic peels if you cook for vegans for deep flavour and colour) and let it simmer until ready.
