I think Valorant is really boring, both to watch and to play, but Ame always makes it entertaining with her shoutcasting.
As far as watchalongs go, I really enjoyed Pokemon 2000 for her cute Togepi impression and the Cat Soup one because it felt like she was sharing something she personally really liked.

yes. folders are the most portable and robust solution. on your pc, on your phone and over the network you get the same stuff without requiring a special program to read your special database with special metadata. to actually sort pics i use imv with a binding to open rofi with the list of all folders in ~/Pictures sorted by recency (using frece). it's probably not the fastest way but it takes about an hour or less to sort 1k of random pics this way. to mitigate partially unsorted folders, files are only allowed in leaf folders.
