Mandatory
Lua for barotrauma-it's just a standard "you need this for almost every mod" mod.
Performance fix- pretty obvious why
Lua linker- lets you link storage directly to crafting stations. This is only if your too lazy to manually link things in the submarine editor.
Submarine mods- can't recommend specifics since that's all up to taste, but more ships means you just have more to play with if you get bored the sub you're using.
Small but nice things.
Zubtrauma adds some more dialogue lines for npcs. I only have that as a must have since seeing my gunner say "DELETED" whenever he kills something puts a small smile on my face.
Dynamic europa- it's a big map mod that merged the functionality of other mods, it adds variety to how outposts (Basically pitstops while your travelling) work. Making each type more unique compared to the base game. Along with changing how the map is generated so it's more unique depending on the biome, adding more missions and it's the mod that has a mission called "raving pirate vessel" so you can already tell it's fun.
Barotraumatic- A huge monster expansion mod that has different difficulty settings I'd recommend explorer version(easy) cause anything higher gets really rough when solo. (install this after getting your head around the game first)
EK mods for 1.x.x-it adds variety in almost everything, ship weapons, craftables, etc. Very common mod I see floating around.
Duffel bags 2.0 - it basically adds a bag of holding which you can put another bag of holding inside cause fuck item management, I'm a giga pack rat.

And sometimes they have a surprise inside like very angry wildlife and infested corspes of people...or something worse.
