Most Holos are content with their comfy salary and the family support system the girls have created for themselves which is why even people like Mel / Aki / Shion / Ayame will never leave even if this isn't the primary focus of their life anymore.
Coco didn't lose to the Zhangs. She didn't even mention them. Shes leaving because just like Haachama she has an insatiable desire to be creative and push boundaries. She can't do so under current restrictions that effect all Holos.
Shes also blowing the door open for others too leave who feel too restricted as well. Nobody wants to be the 1st long time member leave. You feel like your shaking things up and making your family uncomfortable and scared. But now we might be looking at losing 2 - 3 Holos per year regularly because Coco had to stones to be the 1st one even with everything they could to stop her. Which ones? The younger ones like Mori and Haachama have the highest chance because they simply have more opportunities.
