Ahh, if you're keen on sticking to the shield, I recommend you focus on looking at the Guard Boost it has. that determines the stamina cost for blocking and at high levels, it can cost almost nothing, which is why it's also important to upgrade your shield. Shield's resistances determines it's ability to block damage types. It's easier to find ones that 100% block physical but there's no perfect elemental block shield for the most part. For the most part, small shields never have full resistances, medium shields tend to be a good balance and are able to do 100% physical, and tower shields tend to live up to their name. Tower shield bash can actually be pretty handy (and a faith based tower shield has one of the coolest abilities to absorb spells and fire a homing holy bolt on the person that cast the spell), smaller shields tend to focus on higher quality parrying and medium shields are the jack of all trades.
For Dex weapons... There's so many good ones, have fun! Oh also sneaking is fun, you can actually get sorceries/incantations and some items like St. Trina arrows to put enemies to sleep which allows for even more sneaking shenanigans.
