Lemon bars are easy to make, any google search recipe is largely the same and the preparation is easy. It's effectively a small shortbread with a (very large) lemon curd spread on top of it that's cut into, well, bars.
Baklava is a bit of a struggle to do because of the amount of sugar in it making the whole thing a sticky mess but it's not difficult, just messy.
Neither is difficult to do, if you can make an apple pie you can make either of these. Baking isn't hard and I suggest as many people try it as want to, it's fun if you're doing it for you.

Diabetics *can* do it but considering that every bit of sugar we eat has to be allotted for in insulin (for type 1) it gets to be very costly; insulin isn't cheap, and when combined with the physical costs of injections (and of high blood sugar) it's easier to just not have unnecessary sugar intake. It's why diabetics who plan to live beyond the next 3 years usually eat protein and fiber-heavy diets instead of any amount of carbs or sugars.
I'm not very good at it though, I love bread too much.
