And even If the rockets do that much pushback on block, perfect blocking it is a good way to nullify that pushback giving you trouble. As for dealing with 5M and 2H, It is unfortunate due to how crazy good its speed & priority is so I'd advise trying to preemptively attack with Coco's 3H at a near tipping spot since it's good as a check normal to stop that run in 5M attempts into confirm and if you miss at that tipping point range, I wouldn't be too scared since its generally hard to whiff punish and can cancel with fireball to keep safe.
Dealing with 2H might just be a gameplay style kind of issue, since I generally don't jump that much when playing except off of knockdowns and crossup attempts, but If you insist that it is troubling you, I would say going for a jump into airdash feints work well since she will have to gauge if you are actually in range and will try at times, If she does do 2H and she whiffs, I know there's not really some super amazing reward you get like a combo punish, but you closed the gap between her and can start going ape mode on her ass with Coco's dash up 5L stagger and safe fireball string game. The one thing Pekora sucks at is dealing with pressure and that's one thing Coco good at in the upclose range.
I don't know if this is really that insightful since I don't play this game that seriously and don't land big dick combos like the rest of the sweats do, but I can at least tell what they're doing to me and how to deal most of the time (after a few assbeatings). Just my 2 cents
