Assuming they're playing Japanese mahjong, you can refer to this sheet to see what kinds of hands they're trying to build. The basic goal is to build a hand that has 4 sets (either 3-of-a-kind or a 1-2-3 sequence in the same suit) and a pair, but beyond that you also need 1 han, from pic related. There's also bonus tiles, but you can't win with the bonus alone. I can't watch it live, but hopefully it's fun. Hopefully Senchou can get a few good hands, even if she doesn't feel confident in her skills.
