A lot of flavor from crab really comes from how it's prepared/sauces used, like pepper crab, garlic butter crab chili crab, etc, it's mostly how meaty it is as the other anon said. That being said Hokkaido and other rural parts of Japan have a lot of awesome food you can't get anywhere else.
