>>64173086They're used in Europe (mostly Slavic) as a filler food or topping, just like pickles or onions. They're good on salads, but you can find them on sandwiches, in meatloaf, in aspic, etc. Personally I really like pickled eggs, but using copious chopped egg on a salad or added to potato salad is luxurious.
It's just very cheap solid food in places where meat is more expensive. Americans will almost always prefer to use cured pork or cheese in the same situations.
