In western culture, the Moon is often associated with femininity due to classical antiquity mythology (Artemis) and probably it's chronological association with the menstrual cycle, while masculinity is associated with the Sun through Apollo. Since most of vtubing is dominated by female content creators that might explain why the moon is more predominant.
But also, the sun goddess in japanese mythology is Amaterasu, so this gendered duality is maybe not as strong in japan compared to western vtubers. I guess the moon might still be more of a symbol of femininity there too.
