There's an image floating around that compares the Matrix cinema, DVD, Blu-ray, etc. IIRC, the original Star Wars movie releases are hard to get a hold of, and the 3D effects they added in the 90s are the only versions you can watch now.
Even well meaning stuff like remasters are usually done by different artists, and they have to take some liberty to remaster it. Like with old low-poly or pixel art, it's hard to tell what stuff is, but that also kind of lets your brain imagine stuff, the same way people read books and "imagine" scenes differently than movies based on the same book.
