dragon quest 11 is probably the most accessible one at the moment and plays like 8 where you have set party members who have set classes. 8 and 11 are by far the most popular in the west.
if you want to have a more classic rpg experience, custom party members and classes, 3 is getting a beautiful 2.5d remake soon
but if you want the full blown 1980s nip experience you have to play 1 and 2 to get the full payoff of 3. customizable classes. the personality test is still terrifying accurate
4 and 5 are also fantastic choices with 4 having you play a series of short stories that leads up everyone joining the mc. 5 has a plotline where you follow your character from childhood to fatherhood. both have set characters
6 and 7 work better after youve decided if dragon quest is your cup of tea or not. i fucking love 7 and its class system but youll be easily sinking in 150+ hours with that beast.
9 is its own thing
maybe i heard it has some connections with 10- nip only mmorpg now but plays similar to 3 with your customizable class and appearance. bite size stories with an overarching plot
