Moby dick is all about a maniac chasing a senseless revenge, so ahab's motivation being a senseless revenge against an innocent animal works because this isnt story where logic drives him forward, but rather the violent nature of his acts. He's not expected to be rational about this deranged quest
Every story follows an internal logic (for example, suisei needs a shower is about the delicious suismell that should be on my face) so if you are going to deviate from said internal logic then it better be for a subversion that actually makes sense.
