If you go to an Indian grocery store, they probably sell big bags of the fresh leaves (the dry leaves suck just like dried parsley sucks tho). They look and feel a bit like un-dried bay leaves. You're supposed to let them fry in the hot cooking oil for a bit before you add in your onions and spices. It's the real actual unironic secret ingredient to making curry taste authentically Indian. In fact, making curry with curry leaves is standard practice throughout southern India. You could make curry out of nothing but the mashed leaves and oil. Which is a curry curry. Haha. They don't actually call curry curry though. We call it curry because when the British first made landfall in India they were served a stew with curry leaves in it, and the locals said this stew was called "curry," and so the British just said "fuck it" and called every other type of stew and rice gravy curry as well.
