There's a lot of depth in "I'm Pomu" it's not just a simple catchphrase, ironic meme or what have you; "I'm Pomu" is a mantra, a way of living and I'll explain to you why.
First "I'm Pomu" denotes identity, it declares who Pomu is, Pomu IS Pomu. Pomu is no longer Mint, and while there is a woman behind the vtuber Pomu Rainpuff the majority of people in Pomu's life will refer to her as Pomu. This is her main identity, she is Pomu. And as such I will disregard her person and now and forever refer to her as Pomu, not Mint, not her real self, but rather Pomu.
Second and most important "I'm Pomu" is now a way of living. Think about yourself and your career, when you introduce yourself to others you tell them your name and profession, as you would for example say: I'm anonymous, and I am a programmer.
Now think back to Pomu, when she introduces herself to others she'd go "I'm Pomu! I'm a vtuber!"
Pomu is now not only who she is but what she works as. This is further cemented by Pomu's wish to make it big and be able to live off vtbuing alone.
Pomu is not only a vtuber but a character and a person.
Third and most important "I'm Pomu" is a mantra. Imagine receiving an e-mail from AC, informing that you passed the auditions and meet the criteria to be the new vtuber, though one mean or another you're told that from now on you're Pomu Rainpuff. When you meet your fellow Lazulight members you're no longer Mint Fantome the freaky ghost maid. You're now Pomu Rainpuff the fairy, and you refer to yourself as such. Mint is no more. Mint has passed away not only from vtubing but from Pomu's consciousness as well. She is not and will never be Mint again, there's only Pomu.
When Pomu thinks of herself as a vtuber she no longer sees herself as Mint. "I'm Pomu" Pomu tells herself as she looks in the mirror, "I'm Pomu!" Pomu wrote to one of her vtuber friends to break the news to them.
To cut it short anons, "I'm Pomu" is not a silly meme, it's something more akin to a being given life that stripped away Mint Fantome from the woman who we now know as Pomu.
