A single disk is a heavy gamble
A 2 bay NAS (raid 1) lowers the gamble to 50/50 but wastes an entire disk
A 4 bay NAS should be the bare minimum. Raid 5 (Single Parity) wastes less space than Raid 6 (Double Parity) but as soon as you get over 10TB your rebuilds from a failed disk are significantly more likely to kill another disk
8 disks is ideal in a raid 6+0 setup (double parity striped) so that the write speed is fast with how it splits the files and 2 disks can fail and all data is still fine
