We're basically larping as Age of Miracles!Byzantium with a slight bit of magitech, so a less depleted Balkan clime with tacked-on-bits from elsewhere is the general idea.
The country's most fertile lands resemble SW Anatolia, prime wine and garden vegetable growing country, bountiful coastal seas. The southern coast has been extensively carved into rice paddies; a mass initiative took place to improve the diets of the peasantry by planting a thick wall of mangrove forest to protect these brackish fields. In this way, fish and shellfish will wander into the paddies and feed farmers; much like how Hawaiian rice and shrimp farmers may occasionally taken in a fully-grown trevally, our farmers will as well. Excess shore catch is sold off.
Snowfall is rare outside the most northwest bits of the country, and we just do not have seasonal glacier lakes.
