The sample sachets are pre-ground which is probably a big contributor to under-extraction, my usual routine involves putting whole beans through my own grinder. At some point I might get a french press like ol' Big Lez since pour over in general accentuates sour flavors, but for this little experiment I've gone too far to change the brewing method and it would throw off the results.
