First hand experience, I got to my point because I made shitposts for a specific game and that got me subs. No one cares who you are when you start, but if you make vids of a subject you like and then start vtubing you become "that vtuber who makes vids of thing I like". I have a small following that's pretty chill and fun, although I do want to get bigger.
If you go for an oversaturated subject like a specific vidya like smash, you will have to get lucky and get really good at making shitposts. If there's a niche subject/game then it could be easier, but it won't be fun if you don't enjoy the game. Collabs are like walking on eggshells since most of vtubers are from twitter so they're fragile to the mean words, if you gel with another vtuber do not let them go, they're hard to find.
It's getting more and more saturated so you're gonna have to be pretty fucking lucky too.
