I played the game and the same thing happened to me towards the latter half of the game, just rolling and face tanking bosses. It was kind of disappointing but I know it's an old game and FromSoft's first dive into this genre and kind of game so it's interesting to see where it started and where it ended up in Elden Ring. Really shows how perfect Elden Ring is as a game looking back and seeing how FromSoft learned from their previous titles.
