There's a style of steak done in italy that is actually good as fuck, you do it with a EXTREMELY high heat + some oils + sometimes some fancy butter to basically make the outside crispy/burnt but the inside still is medium/rare.
I'm trying to remember the style, I've had it myself and enjoyed it a lot
