My favorite tracks outside of the current SK roster are Rosemi Park, UUUtopia Valley and Rainbow Road.
The New Yukimin City track provides a unique atmosphere to race in even if it's a little barebones.
Nyan/11 GP is kinda its own thing but you could swap out the water track for it.
