Most of the time, shark is just written サメ with katakana. The kanji is almost exclusively used in species names. So even if you knew all 2000 jouyou kanji, you would still probably have to look up the character for same. So again, the fact that you don't know this further illustrates you have no clue what you're talking about.
This is one of the aspects of why her name in kanji is interesting.
