Japanese rice are too starchy for nasi goreng. Basmathi is ideal for quick nasi goreng, issue being its bland as fuck on its own. And usually left over rice are much better for frying, it's an ideal food for dinner.
Washing meat is the usual procedure in SEA, because most of the preparation for meat produce are to cook them to well done with minimal meat smell.
Additionally, the "game" flavor of the meat are toned down most of the time by submerging them in tamarind or lime, this applies to all sorts of meat.
And meat dishes are either boiled, fried, smoked or grilled separately before combining them with other dishes like curry, stew (soup) or nasi goreng etc. Exception for some indian or arabic rice dish where they cook the rice altogether with the meat, similar to Pilaf/Plov.
All meat should be okay if you want to prepare them western style, invest in bone dust scraper, and clean them up if you're unsure. Then always get a thermometer (digital ones), and a hot pan. It should be good regardless where you get your meat (make sure they're compliant to your respective veterinar/produce authority)
