But if I'm being biased tonight (I am), start with the OG Gundam 0079 if you're capable of dealing with old-school animation quality, you can't go wrong.
If that's not good for you, either go with After War Gundam X, G. Gundam or Gundam Build fighters, depending on if you want something a bit darker (without getting full on war-is-hell dark), somethign punchier, or something more fun, respectively.
