Basically OP answers his own question. You don't care and never cared about her past self for real and pretend to not see the advantage of starting with a clean slate. Every ex-holo does it probably because they learned a lot while being a Holo that gave them new perspectives on what to do and not do and they want to dissociate with their older less professional selves.

Also they probably don't want to be peppered for fucking forever for the rest of time by people abit shit that happened like 5-6+ fucking years ago being dusted off as if it's still relevant today.

She didn't create Gura's design funny enough. Cover held auditions for the specific preset models/characters, not for VTubers in general. She gravitated towards this design, now she feels entitled to it, similar to Ame and Aqua.
