Taco Bell always does this. Many fast food places have "limited time specials" like this, but Taco Bell has been probably the most egregious offender for about three decades now.
Despite their "limited time" items being pretty consistently the most popular things on the menu (and several of them have been the most popular things they've ever sold, period), and customers begging them to make the items permanent, they love to remove them and never sell them again.
Nacho fries, incidentally, have been one of their hugest smash hits, so it's actually surprising that they've been bringing them back at all.
