Good coffee isn't actually bitter, it's supposed to be earthy with a slightly sweet but also sour taste, the problem is that 99% of all coffee is burned and that is where the bitter taste comes from the actual drink doesn't have any bitterness
It's impossible to get the real stuff without making it by hand and even most high-end places just burn it and compensate with higher quality beans because so many people are used to the bitter taste at this point
I personally don't even like the taste of real coffee but having had it from a 80y old guy whose shop was basically a broom closet in Japan I can confirm that real coffee doesn't even taste like what people think coffee tastes like
The closest comparison is to dissolve a small amount of cocoa powder in a glass of hot water and add it a pinch of citric acid
