Sim games are generally too boring to stream really (there's a reason most Cities: Skylines playthroughs are time lapse), and Hololivers are banned from anything that even glances in the direction of history, but I could see her enjoying the chaos of Kerbal Space Program. Space sims are where all the action has been happening lately, although there has been an absolute explosion in gimmicky city builders the past few years (just off the top of my head Dawn of Man and its sequel Surviving the Aftermath, Timberborn, Per Aspera, etc.)
