Second, obv their closeness, I can't imagine Botan knowing Aqua, Shion most probably knows tho so there's that.
Preference, if you have ever had an online friend you probably know you get used to it and it may stick around even when meeting irl and knowing their name or any other name they go by, if your friend doesn't mind then you may find youself calling you name named "Josh" as "Spike" if that's his online name.
The holos probably have a combination of these three and I can still imagine Botan's or Polka's old streamer friends calling them their old nicknames regardless of their irl names or their new personas.
