Take Death-sensei, scythe-swinging lessons are kind of exploiting foreigners and Mori would have been super easy to replace. The kids might have been a bit sad to see her go, but they're kids, they'll forget within a week.
Maybe she would have lost her contacts with her old group by refusing, but they would have found someone else to do their work and would have understood her moving on / being busy.
She needs to stop taking work and her professional life so personally. I understand honestly, I've got impostor syndrome too and I'm anxious about disappointing co-workers all the time. This is a flight or fight situation, and Mori decides to fight: make the deadlines and throw herself into work. For a while I thought she had bad business sense and that's why she was making the wrong choice, but she's actually just mentally insane. And I think she knows it, but don't have the courage to face it. It also suits her because that's what got her into Hololive. But it's not healthy.
