A lot the bacon stuff is a marketing meme that comes and goes every 10 years, and gets people to try some gimmick item once, and not again. Brands love it because it drives a spike of demand for the meme, but even they don't plan on continuing it because they know something like a "bacon sandwich wrapped in bacon with maple-bacon glaze" isn't good enough to be a permanent menu item. They move onto some other meme after 2 months.
The "Deep Fried X" is similar, but often specific to "State Fairs", which are basically once-a-year carnivals. Since it's once a year, and most people don't go every year unless you live in the closest city to it, there's a meme factor of "I wonder what crazy shit they're deep frying these days?" and trying it because you know you might not come back for a few years, and it might not be there anymore. I've tried a dozen kinds of "Deep Fried X" items at state fairs, but always with a group of friends splitting it just to each try a bite for the novelty. That's me and people I know, but other Americans will genuinely order, eat and enjoy the full 1400 kcals in a single deep fried slice of cheesecake.
