Holos not doing any fast or fancy maneuvers is more likely to be a tech issue, their tracking's not keeping up and the gear the actors have to wear is either throwing their balance off, or is too fragile to risk it. Think back to Coco's ponderings after her 3D debut and how many times the staff had to forbid her from pulling any of the riskier moves she wanted to try.
