Combat is fundamentally based on dice rolls, there's barely any AI to speak of, the game world doesn't change a whole lot based on what you do, primarily in imperceptible ways like reputation changes. There's just a lot less potential to get into shenanigans or for something entertaining to happen. Morrowind lets you break the game more fantastically than either of the other two, but that's an end-game thing and again, it's not terribly interesting to the observer.
