Paladins worked mostly because (well let's be real, most importantly because Ame was there, but still) its nature is rather beginner friendly. The arenas are small, so you're not getting lost in open fields of nothing. You're fully kitted out right from the start and don't have to waste the opening minutes of every match scavenging for scraps. The battles are full team vs team, so that allows individuals with varying skill levels some slack and be carried more, instead of Apex where it's all just small squads duking it out against all others, much more scary.
And the most important thing, there's very little downtime and fast time-to-kill action. You drop in and you get to pewpewpew the enemy within seconds. And if you get killed (and as a beginner, she's going to get killed a lot, so this is important), there's very little penalty, you just respawn and are back in the action quickly, it's not a match-ender.
In Apex, it can be much more frustrating. First, the "boring" part of scavenging with little action, and then when you finally get some enemy contacts, often in the worst case it's over in seconds, you don't even know what hit you and boom you're right out of the match for good and have to queue again for another match. Very little reward vs high penalty for a beginner, so probably not as fun for her.
