I simply used a tablet to remotely connect to my PC. That was years ago back when this sort of stuff was experimental, it's now basically seamless and native speeds these days.
With a mount on the head of the bed, you can do even more so and free up your lap for keyboard and mouse to do any typing sensitive tasks / play games that are only good with KBM, or using a graphics tablet.
Might need some extension cables as well depending on where the bed is in relation to PC.
It requires some proper prep work, but it is very doable. Hopefully she can get something going to allow her that freedom again.
