Most of the people into it get off on the humiliation. This makes it confusing for both sides. The left doesn't want to engage because they think interracial sex is a good thing, while the right pretends like it's all leftists. The fencesitters think it's all just a joke and make fun of it.
The reality of the situation is that it's not much different from having fantasies about rape or being chocked, which is perfectly accepted nowadays. It doesn't really matter why it gets people off, it just does. (Could be the taboo, the color contrast, or something else entirely.) The real reason it's become such a meme is how people react to that fact, and attribute various narratives to it. Some people think it's a hidden ploy from "da jews" or black nationalists, some people think it's porn companies doing it to dehumanize and exploit minorities, etc.
It's sort of funny how upset people get about it though. You never see this kind of uproar about even stuff like scat or guro.
