Subaru is immensely gullible so I'd want someone who can actually fool her into exonerating Peko like Botan. Botan gets along very well with Subaru and Subaru trusts her due to their many collabs with Choco and Luna. So Botan successfully convinces Subaru to exonerate Peko but eventually finds out Peko was really the mastermind behind it all...which would lead to a possible revenge scheme and another full blown kino PekoSuba war.
That's just a dream scenario though. If just for the laughs then I honestly don't know who I'd want defending Peko.
