The big english groups are Hololive and Vshojo, Holo tries going for an hybrid streamer/japanese idol approach while V is more focused on the usual western streamer culture.
If you know japanese or are willing to limit your exposure to clips translated by third parties there's a lot of vtuber agencies in japan, a lot of them popular with Nijisanji-Hololive dominating the scene. In fact Nijisanji is about to release it's first english generation to compete with Holo so if you want to see someone with good production values from the start of their career you can keep an eye on them.
Now here's something important to note: so far I've only described what happens in the "official" sphere, and these big agencies usually limit the content or collaborations of their hired talents to protect both their talents and of course their own image.
Due to this, there's a very, VERY BIG number of indies that have made a name by themselves by being very hardworking, making great content, having a hidden talent or just having ventured into a niche market and hit the spot. This board is half Hololive but there's also a lot of indies, so try to at least keep them in mind.
