She didn't stream very much before because of a combination of other responsibilities on her roommate and bad management. The bad management in question comes from the fact that her project was a joint venture between Cover and upd8, another vtubing company who is most famous for ruining Kizuna Ai's career and losing Korone and Polka to Cover. The reason why AZKi got a new design (the first in which she was able to offer input on how she wanted it to look), has been streaming more frequently, and is trying out new types of streams is presumably because upd8 went bankrupt at the end of last year and is no longer constraining her activities. It's also the reason for her recent announcement about how her project originally had a scheduled end date that she's chosen to set aside. Her newfound freedom and the recent fairly big surge in interest in her probably convinced her that it would be worthwhile to continue as AZKi.
Also, she really loves music. An event that she's been hosting on a semi-regular basis is a vtuber nonstop music festival. Any vtuber, no matter how insignificant, can submit an MV that gets played during the stream. The most recent one ran 72 hours, featured hundreds of artists, and AZKi herself performed a free concert (as in completely free--all monetization other than joining her membership was turned off) at the end of the event where she covered a bunch of the songs that had been featured. It was a great time.
