Big enough that the rigging can't keep up. In Hololive for example the bigger ones have trouble tracking with the streamer's movements and do an extremely awkward wobble when the model has to move in more than one direction.

This guy basically makes them as big as it gets. Made a few all decent quality. As other anon said rigging gets hard when they are real big.

For general anime girl designs you can go about as big as each boob being the size of the head and still be okay. Beyond that you're entering inflation fetish territory. With vtubers however you have to consider the rigging, specially if 3D is on the table, so you probably can't go too big.
