Let me explain to you holo terms: I think Rushia, Lamy, OP pic, Bae, Kiara, Choco are all fake as fuck and it disgusts me to no end.

Still I get what you're saying, they're real outliers in the HoloEN branch simply because they are so "artificial" with their personas. They feel like they're acting like cute anime girls rather than just being themselves. The rest of the gen honestly doesn't have that problem. Bae is very unfiltered, Sana just gets on stream once a month and does whatever she thinks is funny and Kronii has a genuine autistic meltdown at least once a stream. Gura occasionally gives me feelings of "nobody can actually be this cute" but the shit that comes out of her mouth makes me think that she just is this way.

The issue you'll quickly run into OP is that most girls who stream themselves playing games on the internet are genuinely really, really boring people. I would check out AkioAir, they're absolute goofballs and quite fun to watch, Lisa from Tsunderia and Kronii if you haven't already.

I think you're mistaking acting polite with being fake. Everyone puts on a mask when they interact with other people, no exceptions. Think about how you talk with your parents: You probably don't swear in front of them, because you don't think they'd like that. That doesn't mean you're being "fake" with them, only that you're conforming to some conventions.
That's how it works with vtubers as well, and is perfectly alright. What you seem to want is ironically very parasocial (i.e. genuine interaction), instead of just accepting that vtubers are entertainers and are putting on an act for their audience.

Sometimes their cuteness includes playing a character, but you can tell the difference between streamers who go all in on kayfabe because they love being a vtuber and enjoy having an online persona, like Kiara or Pekora, and girls who are faking it because it's what they're "meant" to do.
