Not just China and Taiwan, but also Japan (don't bite the hand that feeds you), Russia (Cover is smart not too want any reaction due to current war), Philippines and Indo (big markets for vtubers, but also some of the best places to genocide in the game), and middle East (again, Cover wanting to avoid current politics).
This you are left with a much smaller part of the game to play. Even if you focused on the new world, there will be sjws who will discover you since you're more mainstream than most paradox streamers, and will castigate you online for colonialism.
At that point the only safe games are imperator Rome and stellaris. Unless you don't mind keeping your empire to Europe and pretending all foreign stuff is not happening. In that case Prussia and Italy might be good countries, though you have to avoid going east at all cost.
