For me it's easy, if you only had sex with people of your sex you're gay, only people of the other sex you're straight, nobody you're asexual, people of both sex you're bi. Sure people have "phases" but you don't become a virgin again so why should we forget some experience for orientation?
Masturbation doesn't count because it's masturbation, not sex. Romance doesn't count because romance and sexuality are two different things.
