Those open world sandbox type of games will captivate more audience because they are well known already. Also even though these games have been played by other streamers countless times, still everyone's playthrough will always be unique. These games also are great for all kinds of interactions between the holomems and that is what viewers like very much too
Having played all of these games together with friends myself, they are definitely fun.
Why shouldn't they play games that are fun to themselves and at the same time gets them more views than playing let's say a visual novel game?

Now they probably have signed agreements to play the games with multiple companies, like Valve, those Chilla's horror games,even Capcom.
