You think of and interact with most social roles (policeman, waiter, etc) as a role, not as "that person". When you look at ads, you look at objects. When you perform medical surgery, you deal with objects. When you watch porn, you think of bodies, regardless of the watcher being male or female.
"Object" is a function of that arises with interaction. Subject is a state of being but you only interact with "people" when dealing with close interpersonal relationships, where you see them as whole.
No, you thinking "we should treat waiters as people!" doesn't mean what you think it means. It just means not being an asshole. You can treat people kindly at the same time as dealing with them as the objects of your interaction.
