I imagine the only thing that would get a lot of people to develop for minetest instead of Minecraft would be if M$ completely abandons the original version. And even then I bet most mod authors would actually be overjoyed at no longer having to worry about updates and would just stick with it instead, unless they pulled the download entirely and gave everyone Bedrock edition if they don't already have it.
