Though I don't know if she yet really cares about the "gameplay" aspect of the game enough (instead of the social interaction aspect) to actually want to invest time into it offstream to learn, instead of watching netflix for example or whatever. Oh and then you'd have to ignore the group of whiners who complain about why you're withholding content from them and do stuff offstream instead of streaming.
Her biggest problem with these sandbox style games is not knowing what to do, not even in a mechanics sense, but just not knowing what her "goals" should be. She needs some sort of "project" she can work towards so she doesn't just meander around aimlessly without direction. Getting involved in a group of other players can help, not just as a force pvp, but also she can do support tasks like building and crafting supplies etc. So she has something to do as a goal.
As for her being a chicken, remember that a lot of it is also deliberately overacted. Not to say she's actually cool calm and collected and everything is completely fake, but she also plays it up sometimes because she thinks her audience "expects" that from her or that loud noises are more entertaining etc.
For example, during the Outlast stream she made it sound like she was dying and pissing herself, only to admit afterwards later she didn't find the game all that scary and was actually kinda bored, and only did some overacting because she thought that's what people wanted from her and would make the stream more entertaining for the audience.
